Peel, core, and chop 6-8 large apples into small pieces, and put them in a pot.
Add in water, lemon juice, salt, cinnamon, nutmeg, and optional brown sugar and stir to evenly coat.
Bring to a boil, and turn down heat to low with the lid covering the pot. Simmer on low for 20-25 minutes until apples are soft.
Depending on the type of apples, the simmer time may vary slightly, so just stir every 5 minutes and keep an eye on the consistency of the apples until they are soft and ready to mash with a potato masher. (About 20 minutes.)
Serve warm or refrigerate for later!
