During the weeknights, I either need to do a crockpot meal or something that takes under 30 minutes to prep. This is something I make often because it is quick, and everybody loves it. No complaints out of the little ones is always a win! Recipe for this savory egg noodle casserole below!
I am not a food blogger, so I am going to spare you fifty paragraphs of information, but I find food prep images helpful.
To note: Photos are before I started mixing the sour cream mixture with the noodles so it will look a little different!

Ingredients
- 1 jar marinara sauce (I love Rao's)
- 1 - 1 1/4 lb. Ground Beef
- 1 package egg noodles (8 oz.)
- 1 1/2 c. cottage cheese
- 3/4 c. sour cream
- salt to taste
- pepper to taste
- 2 c. shredded cheese (colby jack or cheddar)

Instructions
- Preheat the oven to 350 degrees F.
- Cook the egg noodles in boiling water for about 8 min or until al dente. Drain.
- Brown the ground beef on medium-low heat. Add salt and pepper to taste. Drain excess grease.
- Add marinara sauce and simmer on low.
- While meat is browning, mix together cottage cheese and sour cream in a bowl.
- Add cottage cheese and sour cream mix to cooked noodles in pot and stir well till evenly coated.
- Pour into a 9 x 13 in. pyrex dish or ceramic braiser.
- Layer meat sauce over top of the noodles.
- Layer shredded cheese on top of the meat sauce.
- Cover with lid or foil and bake for 20 min.
- Serve with warm dinner rolls and salad. Enjoy!
Recipe Notes
If you only have tomato sauce on hand, flavor it with some Italian seasoning!
